Aalo Besan Curry

This easy hotel style aloo besan curry goes well with poori and can be done in no time. Do give it a try.

Equipment

  • pressure cooker for cooking the potatoes for 2 whistles

Ingredients

  • 3 pcs potatoes (medium size) boiled
  • 2 pcs onions (medium size) sliced
  • 1/4 cup peas Frozen/ Fresh
  • 1/4 cup carrot diced
  • 4 pcs chillies split in half
  • curry leaves
  • cilantro
  • 1/2 tsp turmeric
  • salt
  • 4 tbsps oil
  • 2 tbsp Chana dal
  • 1 tbsp urad dal
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 pc dry red chillies
  • 3 tbsp besan

Instructions

  • Add oil into a pan and add the chana dal, urad dal, mustard seeds, cumin seeds, dry red chillies and let them fry a bit & add sliced onions, green chillies ,curry leaves.

  • Fry them for 10min. Dont saute the onions for too long, as they become too soft. Add salt & turmeric powder, diced carrot and fry for 2min.

  • Add boiled potato chunks & green peas. mix well. Now add 2 cups of water & let it boil for 5-10min.

  • Add water to the besan & mix well without any lumps. Now gradually add the besan mixture to the curry stiring with a spoon.

  • Add chopped cilantro and wait for the curry to thicken.
