Take a big eggplant and cut into 1/4" thick slices and keep them aside. Dont cut them too thin as they might break while cooking and turning them is hard.
Add little salt, turmeric, chilli powder , oil and coat all the slices well.
To a different bowl, mix coconut flour/ flakes, salt, chilli flakes, cilantro and mix well.
Take a baking sheet lined with parchment paper or aluminium foil and spray some oilve oil.
Now dip the other half of eggplant in coconut flour mixture on both slices and arrange them on a baking tray.
Spray some oilve oil on top and bake them at 350° for 20min or until roasted or crispy on both sides turning them in between.
Serve them hot .
