Eggplant Chips (Brinjal Chips)

Eggplant chips are one of those low-carb recipes and are delicious & keto-friendly and require fewer ingredients and can be baked or air fried and even pan-fried. These are healthy versions of chips made from veggie. What’s better way to satisfy your craving with low carbs in a much healthier way and can be done in under 30min. 

Eggplant chips are salty, spicy and the coconut flakes add a nice texture to the chips. You can get creative with the spices. You can use anything you like from plain salt and chili powder to curry powder or add some parmesan to the almond flour

Eggplants contain a lot of antioxidants and a lot high in vitamin-c and dietary fiber and low in carbs.

This is a very simple dish and can be done in batches and can be stored in a refrigerator and can be used as a side dish or eat as is. These chips are nice and little on the softer side. If you want more crispy ones, slice them thin and bake them into crispy chips.  

This recipe can also be made with Almond Flour instead of Coconut flour

Equipment

Ingredients

  • 1 pc Egg plant
  • 1/2 tsp Salt
  • 1/2 tsp Turmeric
  • 1 tsp Chilli powder
  • 2 tsps Olive oil
  • 1/2 cup Coconut flour/ flakes/powder
  • 1/2 tsp Chilli Flakes
  • Cilantro

Instructions

  • Take a big eggplant and cut into 1/4" thick slices and keep them aside. Dont cut them too thin as they might break while cooking and turning them is hard.

  • Add little salt, turmeric, chilli powder , oil and coat all the slices well.

  • To a different bowl, mix coconut flour/ flakes, salt, chilli flakes, cilantro and mix well.

  • Take a baking sheet lined with parchment paper or aluminium foil and spray some oilve oil.

  • Now dip the other half of eggplant in coconut flour mixture on both slices and arrange them on a baking tray.

  • Spray some oilve oil on top and bake them at 350° for 20min or until roasted or crispy on both sides turning them in between.

  • Serve them hot .
