Keto Egg Kothu Poratta is a famous street food of Tamilnadu made with scrambled eggs or chicken gravy or veg gravy mixed with shredded /minced parotta and combined with the onion and tomato mixture and spices. 

Normally parotta is made with all-purpose flour but when you are on a low-carb diet and craving something new like me, you have to try my version of Keto Egg Kothu Poratta. This recipe is so simple and similar to the normal parotta except I used almond flour tortillas( ready-made) which are paleo, gluten-free, soy-free, and vegan. These are uncooked ones that you need to fry like a roti before using. They become crisp after frying but don’t worry. It turns soft once you mix them with eggs or chicken gravy or veg gravy.

Nowadays you can find parottas in the frozen section of every grocery store. These grain-free tortillas are so handy in my freezer and I usually make this egg kothu parotta for lunch or dinner. It’s a wholesome dish with onion and tomato gravy, eggs, and shredded/minced parottas plus a tasty dish with low carbs.

Kothu parotta is made with vegetables like carrots, beans, peas and gravy for veggie version of parotta , egg parotta which calls for scrambled eggs while chicken parotta is made with chicken pieces and spicy gravy. What ever the combination is I am sure you are gonna like it. Who needs those parottas loaded with carbs when we can make the same version with very less carbs right? This recipe doesn’t become too mushy and remains flaky even if you keep it for a longer time.You can even make this as a lunch box recipe.  Trust me you will love this recipe and will never miss your regular version of kothu parotta.

Ingredients

  • 1 pc Medium size onion Slices
  • 1 cup Tomato Chopped
  • 2 pcs Green chillies Split into 2
  • Curry leaves
  • ½ tsp cumin seeds
  • 5 pcs Almond tortillas/roti's Roasted & cut into pieces
  • 1 tsp Ginger garlic paste
  • ¼ tsp Turmeric powder
  • Salt
  • 1 tsp Chilli powder
  • 1 tsp Coriander powder
  • 4 tbsp Almond oil/ olive oil
  • 4 pcs Eggs
  • 2 tbsp Cilantro Chopped
  • 1/8 tsp GARAM MASALA
  • 1 tsp pepper powder

Instructions

  • Heat a pan & add some oil.

  • Add cumin seeds and fry a min. Add finely sliced onions, green chilies & curry leaves and fry them till the onion changes its color

  • Add ginger garlic paste and sauté for a minute. Now add chopped tomatoes and fry them for 2min

  • Add turmeric powder, salt, chili powder, coriander powder and mix well.

  • Now add four eggs and keep mixing until the egg gets mixed with all the onions and spices.

  • When the eggs are little soft, add the fried almond roti/ tortilla pieces and mix well.

  • The almond roti's becomes crisp like chips once you fry them. so chop them as soon as you remove them from the griddle. You can even tear them with your hands

  • feel free to sprinkle a bit of water once you add the roti pieces to the egg mixture.

  • Keep mixing until everything is well combined. Add cilantro and a pinch of garam masala to finish the dish.
